Description:

Background: The habit of eating street food is a eating habit that occurs in school children. Many snack foods are found to contain macro nutrients and low in micronutrients, especially calcium and fiber, so that if this happens continuously it can cause school children to consume less calcium and fiber. Purpose: To determine the calcium and fiber content in pocket sticks with the addition of fish anchovies and red beans as additional food for school children. Methods: This study was experimental, using a completely randomized design (CRD) and Visual Analog Scale (VAS) instruments and a Likert scale. The concentrations of anchovies and kidney beans in four treatments were 0 g: 150 g, 60 g: 90 g, 70 g: 80 g, 80 g: 70 g. Results: Based on the results of the analysis of the nutrient content of the pocket stick, the best was F3 treatment with the addition of 80 grams of anchovy and 70 grams of red beans, which had a water content of 4.10 g, an ash content of 3.32 g / 100, a fat content of 23.84 g / 100 g, a protein 14.6 g, carbohydrate content 54.08 g, crude fiber content 0.06 g, and calcium content 147.08 mg. For the hedonic test and hedonic quality on all parameters (color, taste, aroma, texture, taste, and overall) there were no differences. Conclusion: Pocket Stick can be used as additional food for school children
